This is a delicious, easy dish that is great for holidays and pot luck dinners. It’s not really a souffle, which makes it easier to cook, but it looks great. You can experiment with using more cottage cheese than cheddar for an even lower-fat version.

3 packages frozen chopped spinach
2 1/2 cups cottage cheese
3 cups shredded sharp white cheddar cheese
1/3 cup flour
3 tablespoons melted butter
Thaw and drain spinach very well (this is important–it will be too mushy without draining properly). Mix all ingredients in a large bowl. Bake in a casserole dish for one hour at 350 degrees.
