Mini Corn Muffins

Mini corn muffins are a great food to make with a friend since they can be made in bulk. Serve these delicious bites of corn bread with maple butter for Thanksgiving and your guests will be begging for more.

Cooking With Friends Kitchen

Ingredients

3 cups flour
2 cups corn meal
¾ cup white sugar
¼ cup light brown sugar
5 tsp. baking powder
1 tsp salt
1 cup 1% milk
1 cup buttermilk
½ cup low fat sour cream
½ cup vegetable oil
2 eggs

For the maple butter
1 stick butter softened
8-12 Tbs. pure maple Syrup

Directions

Preheat oven to 350 degrees F. Mix together flour, corn meal, sugar, brown sugar, baking powder and salt in a large bowl. In another bowl, mix milk, buttermilk, sour cream, vegetable oil and eggs. Add to the dry mixture and mix until smooth. Pour into mini muffin pans sprayed with non-stick baking spray. Cook on 350 until firm to the touch (about 10 -14 minutes). Serve warm with maple butter.

Serves

Makes 6 dozen mini muffins

    What a great story. You are inspiring me w/ all this cooking together. Once I get my new kitchen set up I hope you be joining you w/ cooking w/ friends. I already have me DD thinking about doing a Christmas cookie bake/exchange.
