This is a no-fail end to a summer barbeque that will leave your guests raving. Just make sure that you plan ahead and buy peaches several days before you plan to make it. The riper and sweeter the peaches, the better the cobbler. You can also make them in individual ramekins, which would make an elegant end to a summer dinner party.

1 tablespoon softened butter
3 cups very ripe peaches, skin removed and sliced
1/2 cup granulated sugar, plus 1 tablespoon
1 cup white flour
2 teaspoons baking powder
1 teaspoon salt
4 tablespoons butter
1/2 cup heavy cream
Preheat oven to 375 degrees F.
Lightly butter a pie dish. Place sliced peaches in the pie dish and sprinkle with sugar. (If your peaches are very ripe, feel free to lessen the sugar.) Set aside.
In a mixing bowl, combine flour, remaining sugar, baking powder, and salt together. With a hand-held pastry cutter (or two forks) blend butter into the flour mixture as you would for a pie dough. Add heavy cream and mold loosely into a ball. Roll dough into a crust enough to cover the peaches. Puncture a few holes in the crust using a butter knife and bake until crust is golden brown.
Serve warm with Vanilla ice cream.
