Banana Oat Bran Chocolate Chip Muffins

These simple muffins are on the healthier side since they use bran, bananas and whole-wheat flour.

Cooking with Friends Kitchen

Ingredients

2 cups oat bran
1/2 cup whole wheat flour
1/2 cup light brown sugar
1 1/2 teaspoons baking powder
1 cup 1 % milk
3 very ripe mashed bananas
2 tablespoons melted butter
2 eggs
1 cup semi-sweet chocolate chips

Directions

Preheat oven to 350 degrees. Combine all ingredients (except chocolate chips) in a large bowl. Mix well with a wooden spoon. Stir in the chocolate chips. Spray either a mini-muffin pan (24 muffins) or a regular muffin pan (12 muffins). Fill batter to the top and bake for about 20 minutes or until firm.

Serves

Makes 24 mini-muffins or 12 regular muffins.
