This simple recipe is fun for kids to make and very easy to can.
Cooking With Friends Kitchen
2 quarts strawberries
1 package powdered pectin (1 ½ packages for a firmer jell)
¼ cup lemon juice
7 cups sugar (you can do with less)
Wash strawberries and remove stems. Crush strawberries (a potato masher works well but you can also use a fork). In a large saucepot, combine strawberries, powdered pectin and lemon juice. Bring to a boil, stirring occasionally. Add sugar, stirring until dissolved. Return to a rolling boil. Boil one minute, stirring constantly. Remove from heat. Skim any foam from the top (many people add a bit of butter or margarine to keep the foam off).
Makes 8 pints/4 half-pints
