I’ll admit it, there are nights I just don’t want to cook.
As much as I truly love cooking, there are those moments when everyone is hungry before I get a chance to even think about dinner, and also those times when I’d rather sit down with my husband and have a glass of wine than fire up the stove. And sometimes this summer, I’m just tired from running from swim lessons to work to…you know how it is.
On these lazy summer nights, I am turning to my trusty freezer, stocked with food I’ve cooked with friends and I’m eagerly re-discovering. Tonight I am just not in the cooking mood and I’ll easily whip up a warm-weather meal of Chicken Bok Choy Dumplings, served with rice and homemade ice cream for dessert. And a relaxing glass of wine.
