Rolling Rugelach

October 14, 2008 by Alison

As I rolled the cream cheese dough slathered with cinnamon and sugar into spiral shaped cookies, my friend was rolling dough topped with chocolate chips and cocoa powder. Our toddlers were with us, playing together, running in for a taste every now and then.

This simple yet messy task would have been next to impossible to accomplish alone. I am certain my little one would never have allowed me to take an hour away from him. And if I had dared to try, I am sure I would have had a giant mess to clean up.

Instead, my toddler had a friend to run around with and I had a friend to help me do something that may otherwise not have happened. We were both happy.

I make rugelach too. Beautiful picture. Do you follow a recipe?

Actually, I make a basic cream cheese dough with 1 bar of cream cheese, 1 stick butter, 1 1/2 teaspoon vanilla and a 1/2 cup sugar. Cream everything together until smooth and then add 2 cups of flour. Bring the dough together with your hands, divide it into 4 balls and chill in the fridge for at least an hour.

As for the fillings, I mix together cocoa powder and chocolate chips for one and the other is simply dark brown sugar and a lot of cinnamon. You can add some chopped nuts to either if you wish! I taste as I go to get the desired sweetness.

Since you’ve made it before, I guess you don’t need the rolling instructions. I am not a perfectionist but as you can see from the photo, they are beautiful anyway!

    Thanks for reading.

hi Alison, these sound yummy. I have never heard of them before. I belong to the Cooking with Friends Group but was just reading your blog. I would like to make these. Can you give me rolling instructions please? I am in Australia and can’t remember how much a stick of butter is. Can you help me please? Ta. Also what temp do you cook them at and for how long?

    Thanks Tracy

I would like to try this recipe for Xmas cookies,
and also would like a recipe. How much cream
cheese, how much butter, etc. Baking temp.
Looks and sounds like a perfect addition to my
    Christmas Cookie recipes.

Thanks for your interest in the cookies!

To create the crescents, flour a board generously with powdered sugar, simply roll each 1/4 of the dough into a circle (about 8 inches wide), spread your desired amount and kind of filling (chocolate chips, sugar and cinnamon — I am usually generous!), press the filling into the dough slightly — you can use a rolling pin, cut the dough into pizza-like triangle slices and roll the dough and filling into the shape shown in the photo starting on the wide end first. Sprinkle with a bit of powdered sugar, place on a parchment lined baking sheet and cook in an oven pre-heated to 350 degrees for approximately 14 minutes until golden.

As for the amounts, I listed what I use for my dough in the above comment. You can also add a 1/4 cup of sour cream to the dough if you wish.

Enjoy and let me know how they turn out!

About Alison J. Bermack

It all began when I was a child cooking with my dad, the kitchen a magnet for cooking and camaraderie, a refuge from adolescence. I spent countless hours chopping, sautéing and simmering my way through childhood. And now, with three kids of my own, I’m still chopping, but this time through their childhood and often with friends.
