2 cups peaches, peeled and diced small
1 cup cucumber, peeled, seeded and diced small
¼ cup red onion, diced very finely
1 tablespoon rice wine vinegar
3 tablespoons cilantro, washed and chopped
1 jalapeno pepper, seeds removed and diced finely
1 lime, juiced
1 teaspoon honey
½ teaspoon kosher salt
Gently combine all ingredients in a bowl and chill until serving. It’s best if you use peaches that have a bit of firmness to the touch so that your salsa doesn’t get mushy.
