In honor of national oatmeal day, I’m going to share my breakfast cookie recipe with you since it’s loaded with oatmeal — the best kind — Quaker Old Fashioned Oats! Though I call it a breakfast cookie, it’s usually my mid morning snack cookie after a workout. It’s certainly healthier than a dessert cookie and satisfies my sweet for the day. (At least until night when I head for the ice cream or candy!) And best of all, these cookies have been made over and over again with my good friends who also love them. Enjoy and feel free to get creative and mix in whatever you’d like.
