“Oh my goodness” Doce de Leite Macaroons

April 22, 2016 by Alison Leave a Comment

DSC_0065“Oh my goodness” are the words that came out of my ten year old’s mouth as he sampled the doce de leite macaroons. And I thought the coconut lime ones were the winner! So, forgive me for another macaroon posting but my kids nearly ate every last one and told me I had to share the recipe with you!

The inspiration for these chewy coconut morsels of goodness came from a jar of doce de leite sitting in the fridge staring me in the face. Since my macaroons are made with sweetened condensed milk anyway, I figured using doce de leite  (or dulce de leche!) was a natural. And it seems my caramel colored coconut concoctions (say that three times!) thought so too.

With only five ingredients, these delightful chewy cookies are simple to make. But you might want to double the recipe if your family is anything like mine! Enjoy.

"Oh my goodness! "Is what my ten year old says when he takes a bite of these "creamy, chewy coconut" delights. Many macaroons are made with sweetened condensed milk, so these just take that ingredient one more step to doce de leite (or dulce de leche).

About Alison J. Bermack

It all began when I was a child cooking with my dad, the kitchen a magnet for cooking and camaraderie, a refuge from adolescence. I spent countless hours chopping, sautéing and simmering my way through childhood. And now, with three kids of my own, I’m still chopping, but this time through their childhood and often with friends.
